Hi All
I have a client who owns a farm and wants a simple website shop selling quality meats, they want to accept paypal only.
What do I need to consider and setup for such a shop?

The main aspects are identifying the clients requirements both in terms of front of house operations for users and back end functionality/ MI production. These two then have to balanced against the clients budget.
General SEO needs to be done onsite at least so identification of keywords to target to get the best ROI
The only other main challenge for this particular work is what you use as product images as a load of duck livers on a plate probably wont look too attractive and people may not appreciate images of the animals it is gathered from.

Whatever you do don't just create another boring sparse farmshop with horrid pictures or none at all, just an unhelpful one-line description for each product!

These people (http://thebuttsfarmshop.com/browse_5) have a novel, and quite nice, solution, to the picture problem.
If you Google farm shop ecommerce (http://www.google.co.uk/search?q=farm+shop+ecommerce&ie=utf-8&oe=utf-8&aq=t&rls=org.mozilla:en-GB:official&client=firefox-a) you'll get an idea of how other peiople have approached this.
This farm (http://www.middlefarm.com/04_farmshop.htm) is not ecomm enabled but the shop is very successful. Might be worth a butchers..

Keep it personal and real. You don't want to be just another online website. A well presented website with ease of use and an eye catching design will help.
But most of all pride yourself with it. You want the customer to be happey throughout the process and return, happy customers spend money!

Ecommerce is a large field and is not simply about web design -needs alot of planning and most of this is on the client side. Here are a few starter points
Does the client wish to update the store themselves
Do they need stock management facility
Tax handling
Shipping handling/costs - per weight, per order etc, packing costs free?
What about product photography
How are special offers handled
Newsletter
Feedback from the shop
Emails sent out after order
Marketing
Search engine tag words etc etcHope this helps as a starter point
