I use uniblue to make sure my drivers are all up to date, but it will not let me download ATA/ATAPI - it puts a big red R for risky by it.
Could someone please explain:-
Do I ignore this and manually update this driver (which uniblue does not recommmend) it tells me it could make my system unstable.
Can I download from somewhere else.
What does this driver do.
Thanks

They are the operating system drivers that look after the communication to and from your hard drives / dvd drive / floppy etc.
I can't see that there is going to be any real benefit from updating these OS drivers, just a risk.
In fact, I tend to only update drivers when I have to solve a specific problem.

you do not to keep checking if your drivers are upto date. In fact updating drivers can sometimes cause problems for something that worked perfectly well. The only thing you should consider updating is your gfx card drivers if you had new cards. And I'd certainly not recommend updating ata/atapi drivers unless there's a problem with your drives.
