Hi guys, I recently quit my job to start Affiliate Marketing full time. I've been doing it for 2 years, but only until recently have I been earning full time income.
The dreaded thought of tax has been playing on my mind recently and I would really appreciate some answers.
1. Do I need to register as self-employed at HM Revenue & Customs?
2. Do I need proof of my earnings? Bank statements etc.?
3. Is it a good idea to hire an Accountant?

Yes to all three and number 1 without delay.
As a self employed person you should have registered already with HM Revenue & Customs so may have tax, interest and penalties to pay.

You should have registered when you started this. You are already late and should register with HMRC asap and also see an accountant.
You may not want to declare your past, you dont wait to tell HMRC because you dont have full time income.
There is no definition for a full time income.
