regardless of the content what's better for ranking in the UK

theproductname.eu or theproductnamefish.co.uk

it wont really be fish just an example, it would be a word related to the product.

Any keywords you have in the domain will stand a good chance of being ranked. But the domain is only one in a number of factors that affect ranking and the longer the domain the less memorable and brandable.

with the length of the domain name, unless your a big company like google, is having a short, or catchy name for users to remember relevant these days, would a longer name with better ranking would be more useful?

Go with .co.uk. Keep the domain name short and simple, makes it easier to remember.

if you're going solely for UK customers then stick with .uk as a customer may be put off by the .eu as they may think it's a foreign based company or too big for their needs.
