We have a number of laptops at work running XP - Vista and windows 7 and some data stored on a desktop which is getting a bit to cranky for me

The windows 7 machines all run Home Premium

Is there any worthwhile benefit in having a higher version of windows 7 on the desktop machine or maybe something I should think about when deciding.

Main benefits of Win 7 Professional or Ultimate would be:
1) Security is better - Bitlocker, Applocker, Backup to Network, Encryption, Complete backup/Restore
2) Windows XP Mode
3) Networking is more advanced - Offline Files and Folders / Remote Desktop (ability to organise) Windows Server Domain (ability to join)

The most important future consideration is that Home versions cannot join a Domain. This means you cannot upgrade to a Small Business server and "enjoy" exchange, sharepoint, active directory and so on.

There are no legal restrictions, meaning you are free to use Home versions for business use.
