The googlebot comes back quicker if you add fresh.new and interesting content not at a specific time

I know that Google returns quite regularly once you have been initialy 'visited', dependant on content etc, but my questions really is aimed at newly listed sites!

Google will visit based on reasons to visit. On a new site that could be new conten, or new links (including internal ).

serious question - how does it know about new content before it visits?

Look at when it was last updated.

in all seriousness, knowing the exact time when google crawled particular
sites used to be very useful for SEO.
Back in the good old days before Opera put nofollows on myopera I used
to make posts at about 5 minutes before google crawled it, and quite
often picked up some very useful PR9 backlinks ;)

Google-bot bases its next visit time on more than one factor. One of the factors, as I understand it, with the "fresh content" is the difference between content from visit 1 and visit 2. If the difference is very very little, or nothing, then Google's third visit will not be very soon.
If the difference between the content on 1st visit and 2nd visit has changed dramatically, Googlebot will be back much quicker on the 3rd.

dont be tempted though to make the page totally different on every refresh, google doesn't like this at all
you can though have a little section of your page that is regularly updated which helps with freshness
