Does anyone know how I can increase the thickness of a letter using photoshop etc?

If it is text then the bold of the font normally increases the thickness.
If you turn the text into a raster, alpha to selection, grow selection by the extra thickness you want and the fill the selection with the colour it should also thicken, but the result could be a little odd looking.
Another solution would be to load the font in something like fontforge (http://fontforge.sourceforge.net/) and then edit the glyph in there, save as another font. One of the best books on fonts, is Fonts and Encodings the author has had involvement with fontforge as well.
