Apologies for the simple and dumb question - but how do I optimise images to make them appear in Google / Bing listings better ?

tag them on a correctly titled page. eg meta title says " white xmas tree" , description says "white xmas tree" image is title tagged "white xmas tree" and page has content for "white xmas tree"

First: there are no dumb questions :)

name your pictures with the desired keyword (mychoosenkeyword_jpg)

tag the pictures correctly on forums, blogs e.d.

give them the alt tag. In the alt tag you describe what the picture is. If you go with your mouse over an image you'll see a yellow box with text, that's your alt tag.

It depends what kind of cms (content management system) you use to maintain your website, but usually you can add the alt tag.

Place keywords in ALT text, image name, text around the image. This can actually bring a huge difference to your search engine ranking. Have a separate folder in your server for images accessible by search engines. Lastly, make sure that you use lesser file size as lesser size images can be loaded quickly. One more point you need to remember is never resize your image in your website design program as this will result in small image with same file size. You can use an image editing software.
