Planning on creating a few video guides to stuff.
Should I embed them directly within my site, put them on YouTube, or both?

Got to be both, thats the plan I'm using for an upcoming project for the tutorial videos. Record them, upload to YouTune and then embed those video's in each relevant place.
Only trouble I can see with that is the speed and reliability of Youtube, i.e. if they are overloaded or very slow, then the films on your site will suffer. Might be worth (as a precaution) having a backup link 'youtube loading too slowly? click here to download'

Will there be any issue with duplicate content here? Or does that only really apply to big slabs of text? Wasn't sure whether I should put them on my site first, and only post them to YouTube a couple of weeks later.

Don't think they'll be that interesting to most people! Attempting to explain very dry accounting topics in a mildly amusing way, but still v dull if the topic is of no concern to you.

Both,i would say.
But be very wary of Youtube,it`s not very professional to allow clients to know you are on there,and some dickwad has written nasty,derogatory comments,no matter how good the vid is.

Duplicate content more applies to your page written all about 'widgets' being duplicated on yoursite.com/red-widgets yoursite.com/green-widgets yoursite.com/blue-widgets all with the same content, I don't think embedding a video will fall foul of this!
RE the comments, simply disable them when you have uploaded the video, also disable video responses and other 'community' features that would open yourself up to potential abuse/unprofesionalism.

the fireworks display is not that long.
