Can someone let me know if there is a global setting somewhere in VBulletin that lets me make all signature links no-follow?

I think you just put rel="nofollow" into each link in your signature.

Please don't tell me that I have to do that manually for all 1000 members??
There must be a global setting somewhere?

There are some plug-ins that can do it. I know vBSEO can, but it's not cheap.
Before you change all the sig links to nofollow, you might want to read what Matt Cutts says on the matter http://www.mattcutts.com/blog/pagerank-sculpting/
It won't help to preserve your own site's PR!
